This Asian-inspired chicken curry uses bone-in or boneless chicken thighs for maximum flavour and tenderness. The combination of toasted spices, slow-cooked onions, and aromatic garlic and ginger creates a rich, deeply satisfying base.

The addition of SoHat Carrot Chilli transforms the curry — enhancing the spice profile with a natural sweetness and a smooth heat that builds gradually without overpowering the dish.

Ingredients

Ingredients (Serves 6)

  • 1 kg chicken thighs (boneless or bone-in)

  • 2 tbsp oil (vegetable or sunflower)

  • 1 tsp cumin seeds

  • 1 tsp mustard seeds

  • 2 medium onions (finely chopped)

  • 4 cloves garlic (chopped)

  • 1 thumb-sized ginger (chopped)

  • 1 tbsp curry powder

  • 1 tsp turmeric

  • 1 tbsp garam masala

  • 1 tbsp SoHat Carrot Chilli 🌶️

  • 400g chopped tomatoes (tinned or fresh)

  • 200ml water or chicken stock

  • Salt to taste

  • Fresh coriander (for garnish)

Directions

1. Temper the spices

Heat oil in a large pan over medium heat. Add cumin seeds and mustard seeds. Let them sizzle and release aroma (30–60 seconds).

2. Build the base

Add chopped onions and cook until golden brown (8–10 minutes). This step is key for depth of flavour.

3. Add aromatics

Stir in garlic and ginger, cooking for 1–2 minutes until fragrant.

4. Add spices

Mix in curry powder, turmeric, and garam masala. Cook for another minute to release the oils and intensify flavour.

5. Cook the chicken

Add chicken thighs and coat thoroughly in the spice mixture. Cook for 5–7 minutes until lightly browned.

6. Add tomatoes & liquid

Pour in chopped tomatoes and water/stock. Stir well and bring to a simmer.

7. Add the SoHat twist 🌶️

Stir in 1 tablespoon of SoHat Carrot Chilli — this adds a rich, slightly sweet heat that enhances the entire dish.

8. Simmer to perfection

Cover and simmer for 25–30 minutes until chicken is tender and the sauce thickens.

9. Final seasoning

Adjust salt to taste and garnish with fresh coriander.
