This Spicy Asian chicken noodle soup with carrot chilli is everything you want in a bowl — warming, nourishing, and packed with deep, fragrant flavours. 2 chicken breasts (or thighs for extra flavour)
1.5 litres chicken stock (preferably homemade)
2 cloves garlic (finely chopped)
1 thumb-sized piece fresh ginger (grated)
1 tbsp soy sauce
1 tbsp fish sauce
1 tsp sesame oil
1 tsp SoHat Carrot Chilli 🌶️ (adjust to taste)
150g egg noodles (or rice noodles)
1 carrot (julienned)
3 spring onions (sliced)
Handful of fresh coriander
1 lime (juice)
Optional: pak choi or spinach for added greens
In a large pot, heat a drizzle of oil and gently sauté the garlic and ginger for 1–2 minutes until fragrant.
Pour in the chicken stock, then add soy sauce, fish sauce, and sesame oil. Bring to a gentle simmer.
Add the chicken breasts directly into the broth and simmer for 12–15 minutes until cooked through. Remove, shred, and return to the pot.
Add noodles, carrots, and greens. Cook according to noodle instructions (typically 3–5 minutes).

Add lime juice, taste, and adjust seasoning if needed.
