👨‍🍳 Directions (Step-by-Step Method)
1. Brown the meat
Heat oil in a potjie pot or heavy casserole. Season meat and brown well on all sides (8–10 minutes). Remove and set aside.
2. Temper the spices
Add cumin seeds and mustard seeds to the pot and allow them to sizzle.
3. Build the base
Add onions and cook until softened and golden (10 minutes).
4. Add aromatics
Stir in garlic and ginger, cooking for 1–2 minutes.
5. Add spices
Mix in curry powder, turmeric, and garam masala. Cook briefly to release flavour.
6. Layer ingredients
Return meat to the pot. Add tomatoes, stock, potatoes, carrots, and peppers. Do not over-stir — traditional potjie is layered.
7. Add the SoHat twist 🌶️
Stir in 3 tablespoons of SoHat Carrot Chilli, bringing a rich, slightly sweet heat that enhances the slow-cooked flavours.
8. Slow cook
Cover and cook on low heat for 2–2.5 hours, allowing flavours to develop and meat to become tender.

Mix butter, garlic, parsley, and salt. Slice baguette, spread mixture, and bake at 180°C for 10–12 minutes until golden and crisp.
10. Final seasoning
Taste, adjust seasoning, and garnish with fresh herbs.
